  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 small red onion
  • 1 cup cherry tomatoes
  • 1 can chickpeas (15 oz)
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon ground black pepper
  • 1/4 cup chopped fresh parsley
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese (optional)

Instructions

  1. Rinse quinoa under cold water until clear. In a saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat and cover until fluffy (about 15-20 minutes).
  2. Preheat grill to medium-high. Toss zucchini, bell peppers, onion, and tomatoes with olive oil and seasoning. Grill for 5-7 minutes on each side until tender.
  3. In a large bowl, mix grilled vegetables with cooked quinoa and chickpeas. Stir in parsley and lemon juice.
  4. Serve warm, optionally topped with crumbled feta cheese.
