  • 1/2 cup organic pumpkin puree
  • 1 tablespoon almond butter
  • 1/2 cup raw cashews
  • 3 teaspoons pumpkin pie spice
  • 3 tablespoons ground flaxseed
  • Shredded coconut (for rolling)

Instructions

  1. In a food processor, combine all ingredients and blend until well mixed.
  2. If the mixture is too thick, add more pumpkin puree one tablespoon at a time until desired consistency.
  3. Roll about 1 to 1½ tablespoons of the mixture into small balls.
  4. Place rolled balls in a container and freeze for about 15 minutes.
  5. Remove from freezer and reshape if necessary; return to freezer for another 10-15 minutes if still sticky.
  6. Store in an airtight container in the refrigerator.
