  • 12 ounces smoked sausage (sliced into rounds) or turkey/plant-based sausage
  • 1 small onion (diced)
  • 1 bell pepper (diced)
  • 3 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder
  • 1 cup long-grain white rice (uncooked)
  • 1 can (15 ounces) black beans (drained and rinsed)
  • 2 cups chicken broth (low sodium preferred)
  • Salt and black pepper to taste
  • ¼ cup fresh cilantro (chopped)
  • 1 lime (cut into wedges)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion and bell pepper until softened, about 5 minutes.
  2. Add sliced smoked sausage and cook until browned, about 5 minutes.
  3. Stir in minced garlic, cumin, smoked paprika, oregano, and chili powder; cook until fragrant.
  4. Add uncooked rice, black beans, chicken broth, salt, and pepper; stir well to combine.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is tender.
  6. Fluff rice with a fork before serving; garnish with fresh cilantro and lime wedges.
