  • 2 tbsp olive oil (divided)
  • 8 oz shiitake mushrooms (thinly sliced)
  • 2 tbsp fresh ginger (minced)
  • 4 cloves garlic (minced)
  • 6 cups vegetable broth
  • 2 tbsp soy sauce
  • 1620 oz frozen potstickers
  • 5 scallions (thinly sliced)
  • 3 baby bok choy (leaves separated)
  • 2 tsp toasted sesame oil

Instructions

  1. Heat 1 tablespoon of olive oil in a stockpot over medium-high heat. Sauté sliced shiitake mushrooms until browned and fragrant.
  2. Add the remaining olive oil, minced garlic, and ginger; sauté for 1-2 minutes until aromatic.
  3. Pour in vegetable broth and soy sauce; bring to a boil.
  4. Add frozen potstickers, half of the scallions, and bok choy leaves; reduce heat to simmer for 3-4 minutes until heated through.
  5. Stir in toasted sesame oil; season with additional soy sauce and freshly-ground black pepper to taste.
  6. Serve hot, garnished with remaining scallions.
