  • 2 lb yellow potatoes
  • 2 tbsp Dijon mustard
  • 1 lemon (zest and juice)
  • 1 tbsp apple cider vinegar
  • 1/4 cup extra-virgin olive oil
  • 12 garlic cloves (minced)
  • 4 green onions (thinly sliced)
  • 1/4 cup chopped fresh parsley
  • 2 tbsp chopped fresh dill
  • 2 tbsp chopped fresh mint
  • Kosher salt and pepper (to taste)

Instructions

  1. Boil the potatoes in salted water until fork-tender (about 15 minutes). Drain and let cool.
  2. In a jar, combine Dijon mustard, lemon juice and zest, apple cider vinegar, minced garlic, olive oil, salt, and pepper. Shake well.
  3. In a large bowl, combine cooled potatoes with chopped herbs and green onions. Pour dressing over the salad and toss gently to coat.
