  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach leaves
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Cook the orzo according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium-high heat, heat olive oil. Season chicken with salt, pepper, oregano, and basil; add to skillet. Sauté until golden brown and cooked through (about 5-7 minutes).
  3. Stir in lemon juice and minced garlic; sauté for another minute.
  4. Add cherry tomatoes; cook for about 2-3 minutes until softened.
  5. Lower heat and mix in cooked orzo, spinach, and olives; toss gently until the spinach wilts.
  6. Remove from heat; top with feta cheese and parsley before serving warm.
