  • 1 tablespoon butter
  • 3 teaspoons garlic (minced)
  • 1 sweet yellow onion (diced)
  • 34 medium carrots (sliced)
  • 23 stalks celery (sliced)
  • 8 cups homemade chicken broth
  • 2 pounds boneless, skinless chicken breast
  • Kosher salt (to taste)
  • Freshly made noodles from flour, eggs, salt, water, and olive oil

Instructions

  1. In a large pot, melt butter over medium heat. Add minced garlic, diced onion, sliced carrots, and celery. Sauté until tender.
  2. Pour in the chicken broth and add bay leaves and smashed garlic cloves. Place the boneless chicken breast into the pot. Season with salt and pepper; bring to a boil then simmer for about 25 minutes until the chicken is cooked through.
  3. While the soup simmers, combine flour and salt in a bowl. Make a well in the center; add egg yolks, one whole egg, water, and olive oil. Mix into a dough and roll out thinly before cutting into noodle shapes.
  4. Shred the cooked chicken after removing it from the pot and return it along with freshly made noodles to simmer for an additional 10 minutes until the noodles are tender.
  5. Stir in lemon zest before serving.
