  • 30 ounces Chickpeas (2 cans, rinsed and drained)
  • ÂĽ Cup Lemon Juice (from 1 ½ to 2 lemons)
  • 12 Garlic Cloves (roughly chopped)
  • ½ Cup Tahini
  • Âľ teaspoon Ground Cumin
  • 2 tablespoons Extra Virgin Olive Oil
  • Kosher salt and pepper, to taste
  • ÂĽ Cup water or ice cubes

Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. Optionally peel off the thin skins from the chickpeas for extra creaminess.
  3. In a high-powered blender, combine chickpeas, tahini, lemon juice, garlic, water or ice cubes, ground cumin, olive oil, and salt and pepper.
  4. Blend on high until smooth; add more water if needed for desired consistency.
  5. Transfer to a bowl; create swirls with the back of a spoon for presentation.
  6. Garnish with olive oil and paprika or fresh parsley before serving.
