  • 6 chicken thighs
  • 8 oz. turkey strips
  • 2 large peaches
  • 1 cup chicken broth
  • 1/2 cup honey
  • 1 stick of butter
  • Fresh thyme and basil
  • 2 tsp. sea salt, divided
  • 1 tsp. fresh cracked pepper, divided
  • 1 tsp. oregano, divided
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika, divided
  • 2 Tbsp. extra virgin olive oil
  • 1 large shallot
  • 3 cloves garlic, grated or pressed

Instructions

  1. Preheat oven to 350°F (175°C). Season chicken thighs with salt, pepper, oregano, garlic powder, and paprika.
  2. In a sauté pan, cook turkey strips over medium heat for 3 minutes until dark red; set aside.
  3. Sear seasoned chicken thighs in olive oil for 1-2 minutes per side until golden brown, then remove from pan.
  4. Sauté shallots in remaining oil for about 2 minutes; add grated garlic and cook briefly.
  5. Deglaze the pan with chicken broth, scraping up browned bits.
  6. Mix in butter and honey until melted; return chicken to the pan with thyme sprigs.
  7. Bake covered for 15 minutes; then broil with peach slices on top for an additional 3-5 minutes.
