  • 6 to 8 large apples (mix of Granny Smith and Honeycrisp)
  • 1/3 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 4 tablespoons cold, unsalted butter, cut into 1/4-inch dice
  • 1 TBSP plus 1 tsp cornstarch
  • 2 tsp vanilla extract
  • 1 tsp dry pectin or an extra 1/2 tsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1/4 tsp freshly grated nutmeg
  • 1/4 tsp kosher salt
  • 1 cup brown sugar (for sauce)
  • 1/2 cup light corn syrup
  • 3 tbsp unsalted butter
  • 1 1/2 tsp kosher salt
  • 1/2 cup heavy cream
  • 1 TBSP Spiced vanilla extract (alcohol-free)

Instructions
