  • 2 tablespoons (28 g) butter
  • 1 yellow onion, diced
  • ½ cup (65 g) carrots, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 3 tablespoons (24 g) flour
  • 1 teaspoon (5 ml) soy sauce
  • 1 teaspoon (5 ml) hot sauce
  • 5 cups (1.18 L) chicken broth
  • 1 cup (240 ml) heavy cream
  • 1 ¼ lbs. (567 g) red potatoes, cubed (about 6 small potatoes)

Instructions

  1. In a large pot over medium heat, cook and crumble 1 lb of ground turkey or chicken sausage until browned (about 10-12 minutes).
  2. Reserve 1 tablespoon of drippings; discard the rest. Add 2 tablespoons of butter, then sauté 1 diced onion, ½ cup diced carrots, and 2 ribs of diced celery for 5 minutes.
  3. Stir in 3 cloves minced garlic and cook until fragrant (about 1 minute). Sprinkle in 3 tablespoons of flour and cook for another 2 minutes to create a roux.
  4. Gradually add 5 cups of chicken broth while scraping any bits from the bottom of the pot.
  5. Add 1¼ lbs cubed red potatoes and simmer uncovered for approximately 20-25 minutes until fork-tender.
  6. Stir in 1 cup of heavy cream along with soy sauce and hot sauce before serving.
