  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1/4 cup unsweetened applesauce or a flax egg
  • 1 & 1/4 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together softened butter, brown sugar, and granulated sugar until smooth. Add flax egg and vanilla extract; mix until fluffy.
  3. Incorporate oats, flour, cinnamon, nutmeg, baking soda, and salt until well combined.
  4. Scoop dough into balls and place them on the prepared baking sheet. Flatten slightly.
  5. Bake for 10 minutes; allow to cool before icing.
