  • 2 tsp garam masala
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 2 tsp turmeric
  • 2 tsp smoked paprika
  • 2 tsp adobo seasoning
  • 1/2 lime juice
  • 1/3 cup crumbled paneer or plant-based cheese
  • 1/2 cup mayo or vegan mayo
  • 2 tbsp sour cream
  • 2 cloves garlic
  • 1/4 cup cilantro (roughly chopped)
  • 1 large jalapeño
  • Mini tortillas (mission street style)
  • Red onions (thinly sliced)
  • 1 tsp black pepper

Instructions

  1. Prepare the Filling: Mash cooked sweet potatoes and large potato in a bowl. Mix in chopped scallions, salt, sugar, garam masala, ground coriander, ground cumin, turmeric, smoked paprika, adobo seasoning, and lime juice until well combined.
  2. Make the Creamy Sauce: In a separate bowl, whisk together crumbled paneer (or plant-based cheese), mayo, sour cream, lime juice, and minced garlic until smooth.
