  • 2 teaspoons garam masala
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 tablespoon Kashmiri red chili powder
  • 2 pounds bone-in skinless chicken (or boneless thighs)
  • 3 cups extra-long grain basmati rice
  • 4 tablespoons ghee
  • 2 large yellow onions
  • 3 cups water
  • ¾ cup plain yogurt

Instructions

  1. Marinate the chicken by mixing all marinade ingredients in a bowl. Coat the chicken well and refrigerate for at least 30 minutes.
  2. Soak the basmati rice in water for about 20 minutes.
  3. Set your Instant Pot to Sauté mode and melt 2 tablespoons of ghee. Sauté thinly sliced onions until golden brown and set half aside for garnish.
  4. Add remaining ghee, bay leaves, and half of the marinated chicken to the pot. Deglaze thoroughly and then add the rest of the chicken with marinade.
  5. Pressure cook bone-in pieces on high for 4 minutes or sauté boneless thighs for 2-3 minutes until slightly browned.
  6. Layer drained rice over the chicken, add water, sprinkle salt, and pressure cook on high for another 6 minutes before quick releasing.
  7. Fluff the rice gently and serve garnished with caramelized onions, saffron milk, and fresh cilantro.
