  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 celery sticks, finely chopped
  • 2 garlic cloves, minced
  • 500g minced beef
  • 2 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 400ml beef stock
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 900g potatoes, peeled and cut into chunks
  • 50g butter
  • 100ml milk
  • 100g cheddar cheese, grated

Instructions

  1. Heat olive oil in a pan over medium heat, sauté chopped onion, carrots, celery, and garlic until softened.
  2. Add minced beef, breaking it apart as it browns.
  3. Stir in tomato purée and Worcestershire sauce; cook briefly before adding beef stock.
  4. Season with thyme, bay leaf, salt, and pepper; let simmer uncovered for 20 minutes.
  5. Boil potatoes until tender; drain and mash with butter, milk, and half the cheese.
  6. Preheat oven to 200°C (400°F). Assemble by layering the meat mixture in a dish and topping with mashed potatoes.
  7. Sprinkle remaining cheese on top and bake for 25 minutes until golden brown.
