  • 1.5 lbs (700g) lamb shoulder, cut into chunks
  • 4 large potatoes, peeled and thinly sliced
  • 2 onions, thinly sliced
  • 2 carrots, peeled and sliced
  • 2 cups beef or lamb stock
  • 2 tbsp unsalted butter
  • 1 tsp fresh thyme leaves
  • 1 bay leaf
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large ovenproof dish, melt 1 tablespoon of butter over medium heat. Brown the lamb on all sides, then remove and set aside.
  3. In the same dish, add onions and carrots; cook until softened.
  4. Return the lamb to the dish, add Worcestershire sauce, thyme, bay leaf, salt, and pepper. Pour in the stock and stir.
  5. Layer sliced potatoes over the stew mixture, dotting with remaining butter; season with salt and pepper.
  6. Cover with a lid or foil and bake for 1.5 hours. Remove cover and bake for an additional 30 minutes until potatoes are crisp.
  7. Serve warm.
