  • 1 cup minced shallot
  • 2 teaspoons minced fresh garlic
  • 1 tablespoon finely chopped fresh rosemary
  • 2.5 pounds peeled and sliced Yukon Gold potatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 425°F.
  2. In a large dutch oven, melt butter over medium heat. Sauté shallots until soft (3-4 minutes), then add garlic and sauté for another 30 seconds.
  3. Add sliced potatoes, chicken broth, cream, salt, pepper, and bay leaves. Bring to a gentle simmer over medium-high heat.
  4. Cover and reduce heat to low; cook until potatoes are nearly tender (10-12 minutes).
  5. Discard bay leaves and layer one-third of the potato mixture with one-third of the parmesan in a gratin dish. Repeat layers.
  6. Pour remaining liquid over top and finish with parmesan.
  7. Bake for 15-20 minutes until golden brown and bubbling.
  8. Cool for 10-15 minutes before serving.
