  • 5 small bone-in beef chops
  • 1 large zucchini, sliced
  • 1 large yellow squash, sliced
  • 1/2 onion, diced
  • 1/2 cup bone broth
  • 1 cup heavy whipping cream
  • 2 tbsp Dijon mustard
  • 1/2 tsp oregano
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sauté the zucchini and yellow squash for 5-7 minutes until tender but firm. Remove and keep warm.
  2. Season the beef chops with salt and pepper, then cook in the same skillet until browned on both sides and reaching an internal temperature of at least 140°F. Remove and keep warm.
  3. Sauté the diced onion in the skillet until soft.
  4. Pour in bone broth to deglaze the skillet, scraping up bits from the bottom.
  5. Stir in heavy whipping cream and oregano; simmer until thickened.
  6. Combine sautéed vegetables and beef chops back into the sauce; serve immediately.
