  • 1 lb boneless skinless chicken breasts
  • 1 lime (juiced)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp chili powder
  • 2 garlic cloves (minced)
  • 1 tsp cumin
  • ½ tsp oregano
  • 1 tsp salt
  • ½ tsp pepper
  • 1 large onion (sliced)
  • 3 bell peppers (red, yellow, green, sliced)
  • 8 cheese wraps
  • fresh chopped cilantro (to serve)

Instructions

  1. Marinate the chicken: Combine chicken strips with olive oil, lime juice, chili powder, garlic, cumin, oregano, salt, and pepper in a bowl. Cover and marinate for at least 30 minutes.
  2. Cook the chicken: Heat a skillet over medium heat and cook marinated chicken strips for 2-3 minutes on each side until golden brown.
  3. Sauté vegetables: In the same skillet, add onions and sauté for 3-4 minutes. Then add bell peppers and cook for another 4-5 minutes until tender.
  4. Combine: Push veggies aside in the skillet; return chicken to warm through with veggies for about 2 minutes.
  5. Serve: Place mixture into cheese wraps and garnish with chopped cilantro.
