  • 4 large Eggs
  • 2/3 cup Shredded Zucchini (well-drained)
  • 1/2 cup Swerve Confectioner's Sugar Substitute
  • 2 tsp Baking Powder
  • 1/4 tsp Xanthan Gum
  • 4 tbsp Melted Butter
  • 1 tsp Vanilla Extract
  • 2 tsp Cinnamon
  • 1/2 cup Lily's Baking Chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine almond flour, eggs, zucchini, Swerve sugar substitute, baking powder, xanthan gum, melted butter, vanilla extract, and cinnamon. Mix until well combined.
  3. Gently fold in Lily's baking chips.
  4. Fill the muffin liners almost to the top with the batter.
