  • 2 ounces cream cheese (softened)
  • 3 tbsp butter (softened)
  • 2 tbsp Swerve confectioner's sugar substitute
  • 1 large egg
  • 3 large egg yolks
  • 1 can pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 2/3 cup Swerve confectioner's sugar substitute
  • 3 tsp pumpkin pie spice
  • pinch salt

Instructions

  1. Preheat your oven to 350 degrees.
  2. In a mixing bowl, combine almond flour, cream cheese, butter, and sugar substitute until smooth. Press mixture into a greased pie plate and poke holes with a fork.
  3. Bake the crust for about 20 minutes until set but not browned.
  4. In another bowl, beat the eggs until frothy. Add pumpkin puree, heavy cream, sugar substitute, spices, and salt; blend until smooth.
  5. Cool the crust slightly before pouring in the filling. Lower oven temperature to 325 degrees and bake for an additional 40-45 minutes.
  6. Allow to cool at room temperature before refrigerating for at least three hours.
