  • 2/3 cup almond flour
  • 2 large eggs
  • 1/4 cup sparkling water
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Oil for frying
  • 1 tsp sesame oil
  • 3 tbsp Swerve brown sugar substitute
  • 1 tbsp sugar-free stir fry sauce
  • 3 tbsp soy sauce
  • 2 tsp garlic chili sauce
  • 3 tsp rice vinegar
  • 1/4 cup chicken broth
  • 2 tsp minced garlic
  • 1 tsp ginger paste
  • 4 dried red hot chili peppers
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Heat 2-3 inches of oil in a pot to 350°F.
  2. In a bowl, whisk together almond flour, sparkling water, baking powder, eggs, salt, and pepper.
  3. Coat chicken pieces in the batter thoroughly.
  4. Fry each piece in hot oil until golden brown (about 5-7 minutes).
  5. In another bowl, mix sauce ingredients and simmer in a skillet until thickened.
  6. Toss fried chicken in the sauce until well coated.
  7. Serve with garnishes like green onions and sesame seeds.
