  • 1/2 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/2 cup Swerve brown sugar substitute
  • 3 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 2 tsp cinnamon
  • 1 tsp vanilla extract
  • 6 tbsp butter (unsalted, softened)
  • 1 egg
  • 3 tbsp swerve confectioner’s sugar
  • 1 tbsp heavy whipping cream

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine almond flour, xanthan gum, baking powder, Swerve brown sugar, ginger, cloves, nutmeg, cinnamon, and softened butter until well mixed.
  3. Add the egg and blend until a smooth dough forms.
  4. Wrap the dough in plastic wrap and chill in the refrigerator for at least an hour.
  5. Roll out the chilled dough between two pieces of parchment paper to about half an inch thick.
  6. Cut out shapes using cookie cutters and transfer them to a lined baking sheet.
  7. Bake for 12-15 minutes until lightly browned on the edges.
  8. Allow cookies to cool completely before decorating with icing.
