  • 1 large Egg
  • 1/2 cup Parmesan Cheese (grated)
  • 2 tsp Minced Garlic
  • 1 tbsp Butter
  • 1 medium Zucchini (chopped)
  • 3 cups Kale (chopped)
  • 5 cups Chicken Broth
  • 1/3 cup Matchstick Carrots
  • Additional seasonings: Italian seasoning, onion, celery

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add chopped onion, celery, and zucchini; sauté until softened.
  3. In a bowl, mix ground chicken with egg, Parmesan cheese, minced garlic, and Italian seasoning until well combined.
  4. Stir in matchstick carrots and additional minced garlic to the pot; cook briefly.
  5. Pour in chicken broth; bring to a light boil.
  6. Form small meatballs from the chicken mixture and drop them into the boiling broth.
  7. Cover and simmer until meatballs float to the top (about 10 minutes).
  8. Stir in kale until wilted and heated through; serve hot.
