  • 2 Boneless Skinless Chicken Breasts
  • Juice from 1 Lemon
  • 6 cups Mixed Salad Greens
  • 1 cup Mini Cherry Tomatoes
  • 1 Avocado (sliced)
  • Fresh Herbs (Thyme, Rosemary, Chives, Parsley)
  • 3 tbsp Olive Oil
  • 2 tsp Minced Garlic
  • 1 tbsp Dijon Mustard
  • 1/2 tsp Italian Seasoning
  • 1/2 cup Cucumber (sliced and halved)
  • 1/4 Red Onion (sliced thinly)

Instructions

  1. In a bowl, whisk together lemon juice, minced garlic, olive oil, thyme, rosemary, chives, and parsley to create the marinade.
  2. Coat the chicken breasts in the marinade and refrigerate for at least 2 hours.
  3. Preheat the grill to medium-high heat. Grill the marinated chicken for about 5-7 minutes on each side until cooked through.
  4. In a large bowl, layer mixed salad greens with cucumber slices, cherry tomatoes, avocado slices, and grilled chicken cut into strips.
  5. For the dressing: whisk together lemon juice, olive oil, Dijon mustard, minced garlic, and Italian seasoning in a small bowl.
  6. Drizzle the dressing over the salad just before serving and toss gently.
