  • 6 tbsp butter
  • 3/4 cup granular sweetener (such as Monkfruit Sweetener or Swerve)
  • 1 tsp peppermint extract
  • 1/2 tsp vanilla extract
  • 1 cup shaved stevia-sweetened semi-sweet chocolate

Instructions

  1. In a medium saucepan, combine 2 cups of heavy whipping cream, sweetener, and butter. Simmer over medium heat until melted and dissolved.
  2. Increase heat to bring the mixture to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
  3. Allow the mixture to cool to room temperature before adding peppermint and vanilla extracts (and optional food coloring).
  4. In a separate bowl, whip the remaining 2 cups of heavy cream to stiff peaks.
  5. Gently fold the cooled mixture into the whipped cream until well combined.
  6. Add shaved chocolate and fold gently to distribute evenly.
  7. Transfer to an airtight container and freeze for at least 4 hours or overnight before serving.
