  • 2/3 cup Swerve Confectioner’s Sugar Substitute
  • 1 tsp Peppermint Extract
  • 1 1/2 cups Heavy Whipping Cream
  • Red Food Coloring (optional)
  • 1 cup Heavy Whipping Cream (for whipped topping)
  • 1/4 tsp Cream of Tartar
  • 1 tsp Vanilla (for whipped topping)
  • 1/3 cup Swerve Confectioner’s Sugar Substitute (for whipped topping)
  • Crushed Sugar-Free Peppermint Candies (for garnish)

Instructions

  1. Prepare the Crust: In a bowl, mix almond flour, cocoa powder, vanilla, Swerve sugar substitute, and melted butter until combined. Press the mixture firmly into a greased pie plate.
  2. Mix the Filling: In another bowl, blend softened cream cheese with Swerve until smooth. Add peppermint extract and heavy whipping cream; mix until stiff peaks form.
  3. Color the Filling (Optional): If desired, add red food coloring and blend well for a pink hue.
  4. Fill the Crust: Spread the cream cheese filling evenly over the crust.
  5. Prepare Whipped Topping: In a separate bowl, whip together heavy cream, cream of tartar, vanilla, and Swerve until stiff peaks form. Spread over the cheesecake filling.
