  • 1 1/2 cups shredded mozzarella cheese
  • 2 ounces cream cheese
  • 1 egg
  • 1 cup almond flour
  • 1 tsp baking soda
  • 1/4 tsp xanthan gum
  • 2 tbsp fresh rosemary (chopped)
  • 4 tbsp butter (divided)
  • 2 tsp minced garlic

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a microwave-safe bowl, melt cream cheese and mozzarella together in short bursts until gooey.
  3. In a mixing bowl, combine melted cheese with egg, almond flour, baking soda, xanthan gum, chopped rosemary, and salt; mix until smooth.
  4. Heat 2 tablespoons of butter in an ovenproof skillet over medium-high heat.
  5. Shape the dough into eight rolls and place them in the skillet.
  6. Bake for 20-25 minutes until golden brown.
  7. Melt remaining butter with minced garlic; brush over baked rolls before serving.
