  • 4 eggs
  • 3/4 cup almond flour
  • 2 tbsp Swerve brown sugar
  • 1/4 cup heavy cream
  • 1 cup strawberries
  • 1 tbsp Swerve sugar
  • 2 tbsp water

Instructions

  1. Prepare the strawberry topping by washing and slicing strawberries. In a saucepan over medium heat, combine sliced strawberries, Swerve sugar, and 2 tbsp water. Cook until softened, about 5-7 minutes.
  2. For the batter, blend softened cream cheese and eggs in a bowl until smooth. Gradually add almond flour, Swerve brown sugar, heavy cream, vanilla extract, and salt; mix until well combined.
  3. Heat a non-stick skillet over medium heat. Pour approximately 1/4 cup of batter per pancake and cook until bubbles form on top (3-4 minutes). Flip and cook for another 2-3 minutes until golden brown.
