  • 3 large bell peppers (mixed colors)
  • 1.5 lb lean beef (thinly sliced)
  • 2 cups shredded provolone cheese
  • 1 small onion (grated)
  • 1 cup diced tomatoes
  • 1 tsp kosher salt (or to taste)
  • 1/2 tsp ground pepper (or to taste)
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder (or to taste)
  • chopped cilantro (to garnish)
  • lemon wedges to serve with

Instructions

  1. Preheat oven to 400 °F and grease a baking dish with olive oil.
  2. Cut bell peppers in half lengthwise and remove seeds; season with salt and pepper.
  3. Bake peppers for 10-12 minutes until slightly softened.
  4. In a skillet, heat olive oil over medium heat; add beef and grated onion along with cumin, smoked paprika, and chili powder. Cook until browned (6-8 minutes).
  5. Stir in diced tomatoes and two-thirds of shredded cheese; season to taste.
  6. Stuff each pepper half with the beef mixture and top with remaining cheese.
  7. Bake for an additional 10 minutes until cheese is bubbly and golden.
