  • 2 tbsp Butter
  • 1/2 Onion (chopped)
  • 4 ounces Canned Green Chilis
  • 2 tsp Minced Garlic
  • 5 ounces Cream Cheese (softened)
  • 4 cups Chicken Broth
  • 1/4 cup Sour Cream
  • 1 cup Monterey Jack Cheese (shredded)
  • 2 tbsp Cilantro (chopped)
  • 1 tsp Cumin
  • 1/2 tsp Oregano
  • 1/4 tsp Paprika
  • 1/4 tsp Chili Powder
  • Cayenne Pepper (to taste)
  • Salt and pepper (to taste)
  • 1 large Can of Chicken Breast
  • 1 Jalapeno (sliced for garnish)
  • Lime Wedges (for garnish)

Instructions

  1. In a pot over medium heat, melt butter and sauté chopped onions until softened.
  2. Add minced garlic and sauté for another 30 seconds until fragrant.
  3. In a blender, combine 1 cup of chicken broth with cream cheese and sour cream; blend until smooth.
  4. Pour the blended mixture and remaining chicken broth into the pot with onions and garlic.
  5. Stir in green chilis, cumin, oregano, paprika, chili powder, and salt and pepper to taste.
  6. Mix in canned chicken breast and let simmer for 10-15 minutes until heated through.
  7. Garnish with cilantro and jalapeno slices before serving.
