  • 2 lbs boneless skinless chicken thighs (or breasts)
  • 1/2 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon honey
  • 2 tablespoons gochujang (Korean red chili paste)
  • 3 cups shredded green and red cabbage
  • 1 medium carrot (julienned)
  • 2 tablespoons mayonnaise
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 4 brioche or potato sandwich buns
  • Butter (for toasting buns)

Instructions

  1. In a bowl, whisk together soy sauce, brown sugar, honey, gochujang, rice vinegar, sesame oil, minced garlic, and grated ginger. Add chicken and marinate for at least 15 minutes.
  2. In another bowl, combine shredded cabbages, julienned carrot, mayonnaise, rice vinegar, sugar, salt, and black pepper. Toss well to coat.
  3. Grill marinated chicken over medium-high heat for about 5-7 minutes per side until fully cooked. Let rest before slicing.
  4. Toast sandwich buns with butter until golden brown.
  5. Assemble sandwiches by layering sliced chicken and cabbage slaw on each bun.
