  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 0.5 tablespoon ginger paste
  • 2 cups kimchi, chopped
  • 8 fajita-size flour tortillas
  • Fresh vegetables (cucumbers, carrots)
  • Sriracha mayo (optional)

Instructions

  1. In a bowl, mix soy sauce, brown sugar, garlic, ginger, peanut butter, sesame oil, sriracha (if using), and warm water to create the sauce.
  2. Heat avocado oil in a skillet over medium heat. Add ground chicken with salt and pepper; cook until browned (5-7 minutes).
  3. Pour the sauce over cooked chicken and let it simmer for 3-4 minutes until thickened.
  4. Warm tortillas; fill each with the chicken mixture, kimchi, and fresh veggies.
  5. Serve topped with herbs and sriracha mayo if desired.
