  • 1/2 cup panko breadcrumbs

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon black pepper
  • 1/4 cup unsalted butter, melted
  • 1/4 cup mayonnaise
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In one bowl, mix together Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and black pepper.
  3. In another bowl, whisk together melted butter, mayonnaise, and olive oil.
  4. Coat each chicken breast in the butter mixture thoroughly.
  5. Dredge the coated chicken in the breadcrumb mixture until well covered.
  6. Place on a greased baking dish and sprinkle with paprika.
  7. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
  8. In the last five minutes of baking, sprinkle mozzarella on top and broil until golden brown.
  9. Let rest for five minutes before serving.
