  • 2 pounds Fresh Green Beans (trimmed)
  • 1 small Red Onion (diced)
  • 2 cups Grape Tomatoes (halved)
  • 5 ounces Feta Cheese
  • 1/4 cup Olive Oil
  • Juice of 1 Lemon
  • 2 cloves Garlic (minced)
  • 3 tbsp Balsamic Vinegar
  • Salt and Pepper to taste

Instructions

  1. Cook the green beans in boiling water for 8–10 minutes until tender yet crisp. Drain and transfer to ice water to cool.
  2. In a bowl, whisk together olive oil, lemon juice, balsamic vinegar, garlic, salt, and pepper.
  3. Combine cooled green beans and diced onion in a large bowl; pour the marinade over them.
  4. Mix well to coat everything evenly; cover and refrigerate for at least one hour or overnight.
  5. Before serving, add halved grape tomatoes and crumbled feta cheese; gently mix again.
