  • 2 lbs Ground Beef
  • 1/2 Onion (chopped)
  • 1 Green Bell Pepper (chopped)
  • 2 Jalapenos (finely chopped)
  • 2 tsp Minced Garlic
  • 2 tbsp Tomato Paste
  • 1 cup Fire Roasted Diced Tomatoes
  • 1 cup Beef Broth
  • 1 cup Pumpkin Puree
  • 1 tbsp Chili Powder
  • 2 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
  • Pinch Nutmeg and Cinnamon
  • Salt and Pepper (to taste)

Instructions

  1. In a large skillet over medium-high heat, brown 2 lbs of ground beef with 1/2 chopped onion and 1 chopped green bell pepper until cooked through. Drain excess grease.
  2. Reduce heat to medium and stir in 2 tsp minced garlic, 2 tbsp tomato paste, 2 finely chopped jalapenos, 1 cup fire-roasted diced tomatoes, 1 cup beef broth, 1 cup pumpkin puree, 1 tbsp chili powder, 2 tsp cumin, 1 tsp paprika, 1 tsp oregano, pinch of nutmeg and cinnamon, and salt and pepper to taste.
  3. Mix well and cover to simmer for about 15 minutes until flavors meld.
