  • 1/4 cup all-purpose flour
  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion
  • 2 stalks celery
  • 1 medium carrot (optional)
  • 4 cloves garlic
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh chopped thyme
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 cups beef stock

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Season the short ribs generously with kosher salt and pepper. Dust lightly with flour.
  3. In a large Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes each side.
