  • 1 cup full-fat Greek yogurt
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, minced
  • juice of 1 lemon
  • 1 tablespoon tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon dried oregano or thyme
  • fresh cracked pepper
  • 2 tablespoons extra virgin olive oil
  • ½ medium yellow or white onion, chopped
  • 2 cups Basmati rice
  • 3 cups chicken broth (or vegetable broth)
  • 1 large cucumber, chopped
  • 4 roma tomatoes or 2 large beefsteak tomatoes, chopped
  • 1 tablespoon extra virgin olive oil
  • ½ cup loosely packed mint or parsley, chopped
  • kosher salt and fresh cracked pepper
  • 4 slices naan or pita bread
  • 8 oz. hummus

Instructions

  1. Prepare the Marinade: In a bowl, mix Greek yogurt, olive oil, minced garlic, lemon juice, tomato paste, paprika, kosher salt, oregano (or thyme), and pepper.
  2. Marinate the Chicken: Cut chicken into bite-sized pieces and coat well in the marinade. Refrigerate for at least 30 minutes.
  3. Cook the Rice: Sauté chopped onion in olive oil until translucent. Add Basmati rice and toast slightly before adding broth and salt. Cover and cook on low until rice is tender (15-20 minutes).
  4. Grill the Chicken: Preheat the grill; thread marinated chicken onto skewers and grill for about 5-7 minutes per side until cooked through.
  5. Assemble Your Bowl: Start with rice as the base, add grilled chicken skewers, diced cucumbers, chopped tomatoes, fresh herbs, hummus on the side, and pita bread.
