  • 8 cups organic celery, peeled and sliced thin
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh basil, chopped
  • 1/3 cup red onion, thinly sliced
  • Kalamata olives (for garnish)
  • Feta cheese (for garnish)
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, grated

Instructions

  1. Rinse and pat dry all vegetables. Slice celery diagonally and chop herbs finely.
  2. In a large bowl, combine celery, cherry tomatoes, parsley, basil, red onion, and reserved celery leaves.
