  • 1 cup dry lentils (green, brown, or black)
  • 4 cups water
  • 1 bay leaf
  • 1 medium cucumber, diced
  • 1/2 small red onion, thinly sliced
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 cup kalamata olives, halved
  • 1/2 cup diced roasted red peppers
  • 2 tablespoons freshly-squeezed orange juice
  • 2 tablespoons freshly-squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or agave nectar
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water and combine them with water in a pot. Add a bay leaf and bring to a boil over high heat.
  2. Reduce to medium-low heat and cover; simmer until tender (18-25 minutes). Drain and let cool.
  3. In a large bowl, mix cooled lentils with cucumber, red onion, cherry tomatoes, olives, and roasted red peppers.
  4. In a separate bowl, whisk orange juice, lemon juice, Dijon mustard, honey or agave nectar, olive oil, salt, and pepper until combined.
  5. Pour dressing over the salad just before serving; toss gently to coat.
