  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey (omit for Whole30)

Instructions

  1. Marinate the steak in olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper for at least 30 minutes.
  2. While the steak marinates, prepare the tzatziki by mixing yogurt, grated cucumber, lemon juice, garlic, dill, salt, and pepper.
  3. Whisk together vinaigrette ingredients: olive oil, lemon juice, honey (if using), garlic, oregano, salt, and pepper.
  4. Sear the marinated steak in a hot skillet for about 4-5 minutes per side until cooked to your liking. Allow it to rest before slicing.
  5. Assemble bowls with cooked grains as the base topped with sliced steak and desired toppings like tomatoes and cucumbers. Drizzle with tzatziki sauce and vinaigrette.
