  • 1 lb flank steak (or NY strip/sirloin)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese (optional)
  • 1 cup plain yogurt
  • 1 Tbsp olive oil or avocado oil
  • Juice of ½ lemon
  • 1 large clove garlic, finely minced
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ½ tsp salt
  • 2 tsp chopped fresh mint (or ½ tsp dried mint)
  • 2 tsp oil of choice (like avocado oil or olive oil)

Instructions

  1. Prepare the herbed-yogurt dressing by whisking together yogurt, olive oil, lemon juice, minced garlic, oregano, dill, salt, and mint in a bowl. Refrigerate until serving.
  2. Preheat the grill to high heat (around 450℉).
  3. Season the flank steak with salt and pepper; thread cherry tomatoes and onion onto skewers.
  4. Lightly brush veggies with oil and season.
  5. Grill the steak for about 4-5 minutes per side for medium-rare; grill veggies for 5-8 minutes until softened.
  6. Let steak rest for 10 minutes before slicing.
  7. Assemble bowls with chopped romaine, sliced steak, grilled veggies, hummus, cucumbers, olives, and optional feta cheese.
  8. Drizzle with dressing; garnish with lemon wedges or fresh mint if desired.
