  • 3 ears grilled corn or 2 cups canned corn (drained)
  • 1/4 cup mayo
  • 1/4 cup feta cheese (regular or dairy-free)
  • 1 tablespoon cilantro (roughly chopped)
  • 1 tablespoon lime juice
  • 1/2 tablespoon garlic (minced)
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon kosher salt
  • 812 oz tortilla chips
  • 34 cups shredded cheese (divided)
  • Garnishes: fresh cilantro, green onions, guacamole, sour cream

Instructions

  1. Preheat your oven to 375 degrees F.
  2. If using fresh corn, grill until charred; if using canned, drain well.
  3. Line a cookie sheet with parchment paper and spread a thin layer of tortilla chips.
  4. Sprinkle half of the shredded cheese and half of the Mexican street corn mixture over the chips.
  5. Layer another set of chips followed by the remaining cheese and corn mixture.
  6. Bake for approximately 10 minutes until bubbling and golden brown.
  7. Garnish with fresh cilantro, green onions, guacamole, or sour cream before serving.
