4 skin-on salmon fillets (6 oz each)
3 tbsp white miso paste
2 tbsp unsalted butter (softened)
4 scallions (finely chopped)
2 tbsp freshly squeezed lemon juice
1/4 cup fresh parsley (chopped)
3 tbsp extra virgin olive oil
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, mix the white miso paste and softened butter until smooth.
Line a baking sheet with parchment paper and place salmon skin-side down.
Spread the miso butter evenly over each salmon fillet.
Bake for 12-15 minutes until the salmon flakes easily but remains moist.
While the salmon bakes, combine scallions, parsley, lemon juice, olive oil, salt, and pepper in a bowl to make the salsa verde.
Allow the salmon to rest briefly before serving topped generously with salsa verde.
