  • 1 tablespoon flaxseed meal
  • 1 ⅓ cup almond flour
  • 1 ½ cups oat flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon Kosher salt
  • ½ cup vegan chocolate chips
  • 2 medium bananas (mashed)
  • ¼ cup coconut oil (melted)
  • ⅓ cup almond milk (or coconut milk)
  • ½ cup coconut sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a small bowl, mix flaxseed meal with water and set aside for about five minutes to thicken.
  3. In a large bowl, combine almond flour, oat flour, baking powder, baking soda, and salt.
  4. In another bowl, whisk together mashed bananas, melted coconut oil, almond milk, coconut sugar, vanilla extract, and the prepared flax mixture.
