- 6 tablespoons unsalted butter
- 1 1/4 cups water (divided)
- 6 containers of fresh raspberries
- 1/3 cup sugar
- 1 teaspoon fresh lemon juice
- 3 tablespoons cornstarch
- 1 package cream cheese (dairy-free optional)
- Prepare the crust by mixing crushed Nilla wafers with melted butter and pressing into a pie dish.
- In a saucepan, combine half the raspberries with water and sugar. Bring to a gentle boil.
- Mix cornstarch with remaining water, then stir into the boiling mixture until thickened.
- Remove from heat, cool slightly, and blend in the cream cheese until smooth.
- Pour the filling over the crust, top with remaining raspberries, and refrigerate for at least 4 hours or overnight.
- Serve chilled, optionally topped with whipped cream.
