  • 65 crushed Nilla wafers
  • 6 tablespoons unsalted butter
  • 1 1/4 cups water (divided)
  • 6 containers of fresh raspberries
  • 1/3 cup sugar
  • 1 teaspoon fresh lemon juice
  • 3 tablespoons cornstarch
  • 1 package cream cheese (dairy-free optional)

Instructions

  1. Prepare the crust by mixing crushed Nilla wafers with melted butter and pressing into a pie dish.
  2. In a saucepan, combine half the raspberries with water and sugar. Bring to a gentle boil.
  3. Mix cornstarch with remaining water, then stir into the boiling mixture until thickened.
  4. Remove from heat, cool slightly, and blend in the cream cheese until smooth.
  5. Pour the filling over the crust, top with remaining raspberries, and refrigerate for at least 4 hours or overnight.
  6. Serve chilled, optionally topped with whipped cream.
