  • 360ml heavy cream
  • 6 egg whites, at room temperature
  • 300g granulated sugar
  • 3/4 teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract
  • 3036 full-sheet graham crackers

Instructions

  1. Prepare an 8-inch square baking pan by lining it with parchment paper.
  2. For the chocolate ganache, heat the heavy cream until just simmering; pour over chopped chocolate and stir until smooth.
  3. Create meringue by whisking together egg whites, sugar, and cream of tartar over simmering water until melted; beat until stiff peaks form, then add vanilla.
  4. In the lined pan, spread a thin layer of meringue, then alternate layers of graham crackers, meringue, and chocolate ganache until all ingredients are used.
  5. Cover tightly and chill in the refrigerator for at least 12 hours.
