  • 2 cups uncooked elbow macaroni
  • 1 can (15 oz) diced tomatoes (undrained)
  • 1 can (15 oz) black or kidney beans (drained and rinsed)
  • 2 cups beef or vegetable broth
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, about 3-4 minutes; add minced garlic for another minute.
  2. Add ground beef or turkey; cook until browned. If using plant-based crumbles, add them after the aromatics are softened.
  3. Stir in chili powder, cumin, smoked paprika, salt, and pepper. Add elbow macaroni, diced tomatoes with juices, beans, and broth.
  4. Bring to a gentle boil; reduce heat to low and cover. Let simmer for 15-20 minutes until pasta is tender.
  5. Stir in both cheeses until melted and creamy. Serve hot with desired toppings.
