  • 1 pound large shrimp (peeled, deveined)

  • 1 cup cherry tomatoes (halved)
  • ¼ cup grated parmesan cheese (optional)

Instructions

  1. Heat 2 teaspoons of olive oil in a large pan over medium-high heat. Add shrimp seasoned with Italian seasoning, salt, and pepper. Cook for 2-3 minutes until pink and opaque.
  2. Remove shrimp from the pan and cover to keep warm.
  3. Wipe the pan clean, add another teaspoon of olive oil, then sauté the zucchini noodles over medium-high heat for about 3-4 minutes until just tender.
  4. Stir in the pesto sauce until fully incorporated.
  5. Return the shrimp and cherry tomatoes to the pan, tossing gently until combined.
  6. Serve immediately topped with grated parmesan if desired.
