  • 3 tablespoons white vinegar
  • Juice of 1 lime (about 2 tablespoons)
  • 3 tablespoons neutral oil
  • 1 teaspoon kosher salt
  • Black pepper (to taste)

Instructions

  1. In a small jar, combine 3 tablespoons white vinegar, the juice of 1 lime (about 2 tablespoons), 3 tablespoons neutral oil, 1 teaspoon kosher salt, and black pepper to taste. Seal tightly and shake until emulsified.
  2. In a large bowl, mix 4 cups shredded cabbage, 1.5 cups diced pineapple, 1 cup shredded carrot, ½ diced red onion, 2 finely diced jalapeños, and ½ bunch chopped cilantro.
  3. Pour the dressing over the slaw mixture and toss until evenly coated.
  4. Let sit in the fridge for 5-10 minutes before serving chilled.
